Sheet Pan Meal: Teriyaki Salmon & Veggies

I know what you're thinking. SALMON? Baking with Blondie does NOT like salmon.  Well, it's true. Honestly, fish isn't my first choice. But I've learned to actually like salmon, and I wasn't going to go a full week of Sheet Pan Meals without at least making something fish-tastic for you to try! If I've tried it and loved it, you know for sure it's going to be a success in your kitchens!

Heeeeey you guys!!! Happy Monday, and welcome to my official "Sheet Pan Meals" week! Each day this week, I'll be sharing one dinner recipe where the entire meal is baked on ONE sheet pan in your oven. Yep. Just one, and each as delicious as the last.  After my Breakfast Toast Week  at the beginning of January, I thought it would be fun to do one week each month this year that's dedicated to one thing. My Breakfast Toast Week was such a success and I can't thank you all enough for your comments, messages, and emails about it!  This month I'm shifting gears more towards dinners during my themed week. Sheet Pan Meals were all the rage last year, and I totally feel like I missed out entirely during my blogging break. So I've been trying sheet pan dinners like a crazy woman and have narrowed it down to my 5-6 favorite ones. Tuna Stuffed Avocados

Savory tuna, soft avocado, juicy peppers, zesty lime, and lovely green onions & cilantro come together in this super healthy and easy lunch or snack!  I have quite a few more healthy recipes to share with you guys, and to top it off, I'm starting my Sheet Pan Meal Series next week (you are NOT going to want to miss it!!), so stay tuned for lots to come here on the blog.  These tuna-stuffed avocados were beyond tasty. I'm the first to admit that I'm not really a fish gal. Sure, I've had it a few times, and even liked it sometimes, but I've never actively gone out and said "hey, I need some fish in my life!" haha. So when I share a fish recipe on the blog, you know it's a good one to please just about anyone! Let's dive right in, shall we? 

Thai Peanut Veggie Noodles

So, today's recipe is meatless, and STUFFED full of fresh veggies. It's insane, I tell you.  There are some days when I feel like I need a giant juicy steak, and sometimes, I really, really, crave a bowl full of lovely veggies.  This, will feed your veggie-tooth in countless ways, and will leave you saying "Steak say whaaat?"  Here we go:

Okay, friends. I know I haven't shared a "baked dessert" recipe yet this year - and this is supposed to be "BAKING with Blondie" hah! But as much as I love a good dessert, I want to make sure you have options to choose from. After all, we make dinner every single night, and dessert probably once a week, so if your family is like mine, you're more likely to try a dinner recipe than a dessert one anytime soon.  However, when we make desserts, we go big and never look back.  This week, I couldn't wait to share my new lemon poppyseed bundt cake recipe. And you guys, it's not just any other bundt, you're going to drizzle the heck out of every slice with my heavenly blackberry glaze. It's a game changer, for sure. I can't picture lemon poppyseed without it now. Let's dive in! 

Easy Teriyaki Noodle Bowls

The simplest teriyaki sauce from scratch, tossed with juicy chicken, fresh stir fry veggies, and yoki-saba noodles, makes for your easiest (and tastiest) weeknight dinner yet!  Happy Wednesday, everyone! We're already halfway through the week, and I feel like it's been taking forevvvvvver. But we're almost to the weekend (at least that's what I keep telling myself), and I have one more mouthwatering recipe to share with you tomorrow (brace yourselves for a dessert, at last!), so stay tuned!  Today, though, we're going to get lost in these noodle bowls. 

Green Smoothie Freezer Packets

If there's one thing that I know, is how to make a killer green smoothie. Almost three years ago this month, I started on the green smoothie train. I tried so, so, many recipes... and lots of them were really awesome. But none compared to this little concoction of mine. I have one of these almost every morning (especially if I've gone for a run), and it really is the best tasting green smoothie I've ever had. You can't even tell there's spinach in there. It tastes like a pina colada pineapple type smoothie instead, which is another plus.  I don't have a lot of time in the morning to chop up fresh pineapple and bananas, and sometimes my giant spinach bag doesn't keep as well as I hope. Garlic Parmesan Spaghetti Squash

Tender spaghetti squash, roasted to perfection in the oven, and tossed with garlic, Parmesan, and topped with parsley for extra flavor. A healthy way to cut carbs completely out of the picture, without missing it for a second.  Alright, guys. I realize that this recipe is another garlic Parmesan recipe for this week, but I couldn't go another second without posting my favorite way to eat spaghetti squash! 

One-Pot Garlic Parmesan Pasta

Alrighty, friends, this recipe was one that I teased on my Instagram stories a while back.  I've had more than a few of you get back to me asking for the recipe asap! So here it is, without delay: the recipe we make on a weekly basis. Yep. Weekly.  Why? It goes with everything, my kids inhale it, my husband loves it, I love to make it, and it's SUPER easy to make. I love to serve it alongside steamed veggies (usually broccoli) or/and grilled chicken. It comes together in a little more than the time it takes to boil the noodles.  And the fact that it only takes one pot to make doesn't hurt, too, eh?  Intrigued? Let's dive in!

Hey there! Happy Saturday! I'm not usually one to post on a Saturday, but I had just one more simple breakfast toast idea to share with you to complete my Breakfast Toast Week. This one is probably the most simple of them all, but as they say - last but most certainly not least!  I've loved sharing these toasts with you throughout the week. You guys have been so nice in trying them out right away and getting back to me on how it went. I wanted to do toast recipes that were so simple, that you could go in your pantry right now and make them. As are some of the best recipes, right? I love recipes like that, and I wanted to make sure each of these wasn't too much of a stretch for anyone to make in their kitchens.  Toast #6 of the week is the ever classic: Apple Cinnamon Peanut Butter Toast!

Breakfast Toast Week: Almond Butter Banana Toast with Dark Chocolate Chips

Hey friends! Today's toast (#4 - see previous three posts, and tune in the rest of the week for some other yummy ideas!) in my official toast week is SUPER simple.  Like stupid simple.  But it's one of my favorite go-to's in the morning, so I couldn't do a toast week without sharing one of my favorite easy go-to toasts. If you think it's lame, then you can make yourself some of this toast and chill out, man. Just kidding. Not kidding about the "eating some of this toast" part, though.

Breakfast Toast Week: Nutella Orange Toast with Pecans

Okay, friends, here we are on Day 3 of my breakfast toast series, and I've already had more than several of you tell me you've run to your kitchens and tried the toasts. YOU ROCK! This makes me super happy! It just goes to show how super easy these are, and how gosh darned tasty they are, too.  Today? This one is a little different than your average breakfast toast, and might be more on the sweeter side of the breakfast toast line, so this one is more of a "snack sparingly" kind of toast.  But don't you dare run away because I said sparingly, or sweet! This is Baking with Blondie, for heaven's sake - we LOVE sugar around these parts. Just a bit more on the "not-so-often" side right now. THIS toast, however, is worth it. I mean one word can make me come running...  and that word is  nutella.

  Hey there! Welcome to day 2 of my breakfast toast week! So far we've had a very simple Berry Almond toast with mint , and man was it tasty. I've loved hearing what your favorite way to have toast in the mornings have been, and I can't wait to add more to my rotation because of your delicious suggestions!  Today, we're taking a step back from the sweet lovely berries, and heading towards my favorite part of foodie land: savory & delicious Mexican food.

  Happy first week of the brand new year, friends!  I know there are many of us who love to make new-year resolutions - heck, I'm one of them! I love how fresh and new the year feels right at the beginning, and my favorite thing to do is to take a minute, give myself an evaluation, and set a few goals for myself and my family.  I know it's super common for us to make resolutions based on our eating habits. Especially after the holiday season, and after all those delicious candy and treats! I know I've set a goat to eat a little less sugar each day (one day at a time, haha).
