Breakfast Toast Week: Mango and Toasted Coconut Toast


HAPPY FRIDAY, friends!!! We made it. 
I have two more toasts to share with you here on my breakfast toast week (so make sure to tune in tomorrow for the last and final toast - it's one of my absolute favorites, so hang tight!  

First, let's do a quick review... 


and today we take a little tropical turn with my 

Mango & Toasted Coconut Toast! 

 

Guys, I have fallen hard for toasted coconut. And not the sweetened little shaved stuff - the thick shaved toasted heavenly sprinkles of hawaiian paradise you see above. I've decided I could very well sprinkle them on everything. 

Like everything. 

I make toast now sometimes JUST so I can put thick coconut shavings on it. I put it in my cereal. I top off my yogurt and oatmeal with it. I eat it by the handful. 

Okay, so I have a problem.

I guess what I'm saying is that there was NO way I was leaving toasted coconut out of a toast this week. And not just any toast - a tropical themed toast! 

The ingredients, just like the other toasts this week, are super simple:

We start with the classic honey whole what toast which I love, love, love from Costco. 

Next, some greek yogurt swirled with honey or agave. You can also sweeten it with 100% maple syrup if you wish. I've also tried this with fat free cream cheese, so you really can't go wrong with any of them. 

Lastly, top with some juicy sweet mango slices and toasted coconut. 

I mean, if Friday's aren't already enough of a party, we just got one started!

Mango and Toasted Coconut Toast

ingredients:
honey whole wheat toast
*greek yogurt + either honey, agave, or 100% maple syrup
fresh mango slices
thick shaved toasted coconut

method:
Toast the toast. Spread with spread, top with mango slices and toasted coconut. Enjoy! 

*you can also do a light cream cheese spread, as well.
