Easy Mini Cinnamon Rolls


Apparently it's mini-treat week here in the Blondie household. I don't know how I didn't realize I'd planned three new recipes to try that include the mini-muffin tin. I told you I was obsessed. I've now proven that to myself without even knowing it.

I've had these pinned for a while, and I would have made them much sooner if I knew how gosh darned easy they were! I found them on one of my favorite blogs: Iowa Girl Eats. She has fantastic recipes - I'm actually making two of them this week. Her recipes lean towards the healthier side of life, but she certainly knows how to make a killer dessert. I also really enjoy looking through her workout lists. If you're a treadmill runner (I'm not. I'm kind of a purist, and only run outside/indoor track. Yes, even in the dead of winter), she has some great running plans for that kind of thing. I'm such a fan of her website. Kudos, Kristin, for your inspiration.

I couldn't believe how fast these mini cinnamon rolls came together. They taste absolutely perfect - and I didn't have to slave away with homemade dough rising, etc. These rocked my socks! The maple syrup in the icing kicked up the comfort, and the bite-size-appeal was just splendid. I have another package of crescent rolls in the fridge, and I plan on making another batch of these little lovers tomorrow morning before Ryan heads to work.

I added chocolate chips... kind of sentimental move. When I was growing up, my mom Made to-die-for cinnamon rolls. We were rotten little children, and made a fuss whenever she used raisins. She ended up using chocolate chips instead. She's cool like that.

Easy Mini Cinnamon Rolls 
recipe idea from Iowa Girl Eats

Rolls:
One package of Pillsbury Crescent Rolls
1/4 C brown sugar
2 T unsalted butter, softened
1/8 C mini chocolate chips
2 T cinnamon

Drizzle: 
1 t maple syrup
3/4 C powdered sugar
1 T skim milk

Preheat oven to 375 degrees.

Pop open your crescent roll package, lay them out together in a flat square, pinching together the seams so it's all one rectangular piece.

Spread on your butter, then add as much brown sugar, cinnamon, and mini chocolate chips as you want. The ingredient measurements above are just to my taste, and what I used. So it's totally up to you.

Roll it all up in a log - rolling from the small side of the rectangle. Spray your mini muffin tin. Slice the cinnamon roll log into about 1/2 inch slices and carefully put each cinnamon roll in each muffin cup. Pop 'em in the oven. Mine were ready at about 10 minutes.

While your cinnamon rolls are in the oven, make your drizzle. Mix powdered sugar, maple syrup, and skim milk together in a small bowl until white pieces are broken down.

Drizzle over your warm little lovers. I dare you to eat just one.
