Looking for the perfect little muffin? These are your new best friend.
I originally was going to make this recipe a little later this week, but I found my strawberries becoming a wee-bit impatient. Eh, no worries. In no time, they were thrown in the oven with their new cream-cheese suitor.
I love my mini-muffin pan. I originally bought it for my son's birthday party and have used it several times since. After seeing these muffins on Pinterest, I couldn't help but continue my strawberry-fetish (and good timing, they're in season!) by making them.
This recipe makes about 12 large muffins, so that's about 36 mini muffins worth. I actually did half and half - some small, some large. I loved popping the warm small muffins in my mouth! The warm, sweet, gooey strawberry was met perfectly with the creamy, tangy, cream cheese - all wrapped up in the moist muffin goodness. It's a winner, I must say. I just can't wait for Ryan to come home and try these. He loves anything with cream cheese!

Mini Strawberry and Cream Cheese Muffins

Muffin Mixture:
2 C all-purpose flour
3/4 cup sugar
2 t baking powder
1/2 t salt
1 C whole milk
1/2 C unsalted butter, melted
1 t vanilla
2 large eggs, room temp, beaten
1 C fresh strawberries, chopped into small pieces
Cream Cheese Mixture:
4 oz cream cheese, room temp
1/3 cup sugar
1 t vanilla
Preheat oven to 350 degrees.
Using a small bowl, mix together cream cheese mixture ingredients until thoroughly combined. Set aside.
In a big bowl, combine flour, sugar, baking powder, and salt. Set aside
In yet another bowl (medium, perhaps), whisk together milk, melted butter, vanilla, and eggs until incorporated.
Using a spatula, mix the milk mixture into the flour mixture. Fold together until combined, and don't over-mix.
Spoon the batter into prepared tins, filling them no more than 1/3 full. Scatter a few pieces of strawberry in each tin over batter. Spoon about a teaspoon of cream cheese mixture over the strawberries. Spoon about a tablespoon of muffin batter and then sprinkle strawberries over everything. Sounds crazy, but trust me.
Bake muffins for 25 minutes (if doing regular-sized muffins)
Bake muffins for 15 minutes (if doing mini-muffins)
Let muffins cool in pan for 10 minutes.
