Peanut Butter Chia Seed Granola

Heyyyyyy you guys! It's Tuesday, and Day 2 of my "Granola Week" here on Baking with Blondie. Yesterday, I shared an amazing Strawberry Dark Chocolate Granola that would seriously blow your mind.  Today, oh man, I had to resist to not share this one weeks ago when we tried it in my kitchen.  Let me start off by saying that this granola is BY FAR my favorite one we've ever tried. It's hearty, it's healthy, it's the granola I couldn't stop thinking about, and it's the one I seriously made up reasons to eat some more.  Intrigued? You should be! This one's freaking dynamite!!! 

Strawberry Dark Chocolate Granola

Hello dear friends!!! I have something super special to share with you this week that I've been working on for a while. As you know, at the beginning of every month, I take the time to dedicate and entire week to a different kind of food, and try my best to share 5 incredibly mouthwatering recipes to go along with that theme. In January, I shared some crazy delicious breakfast toasts, and in Feburary I went a little sheet pan dinner crazy  This month, I thought it would be fun to share my breakfast love: homemade granola.  My kids eat it up like crazy, so batch after batch is made in my kitchen. We've tried dozens of recipes, and the 5 I'm sharing with you this week are our absolute favorites!  Homemade granola is SO easy to make. You can make it into whatever flavor you'd like, and transform the flavors from perfectly healthy way to start the day, to even a more delicious sweet treat to have while you're binge-watching Grey's Anatomy on Netflix...

Chili Verde Chicken Chili

As a family favorite, this healthy light Mexican soup is finished in under 15 minutes, and has under a handful of easy ingredients. Win-win, right? I thought spring was right around the corner, but Utah had other plans today! We woke up to a fresh blanket of snow, after hitting almost 60 degrees yesterday. Weird. Oh well, we're firing up another pot of soup and will cozy up with yet another run of Moana and all the warm fuzzy blankets we can find. Another few weeks of winter seems much better that way! Soups like this tie everything together, that's for sure, and this one is definitely a winner.

Green Chile Chicken Enchilada Casserole

Layers of corn tortillas with seasoned chicken, beans, corn, and 2 different kinds of melted cheese tie this incredible casserole together for the perfect easy dinner for a crowd.  I made this delicious family favorite last week on Facebook LIVE ( here's the video if you missed it!), and it received such an amazing response! I was hoping you all would love it, and it was so fun to have so many of you email me for the recipe. I've learned a lot so far with the past three weeks of doing FB LIVE, and I know for sure now to have a recipe ready for you guys after the video is done!  So here it is - better late than never, right? haha. 

Valentine's Day Double Chocolate Donuts

OH man, you guys. Valentine's Day is next week and we are already smitten for all things looove around here. And I LOVE these double chocolate donuts. Like a lot, a lot.  And you will too - no joke. They were soft, sweet, and had the most gorgeous texture. Truly a lovely treat for Valentine's Day - or any other day you're craving a special treat! 

Creamy Sausage and Tortellini Soup

Can you believe it's National Soup Day?! I mean, what a perfect time of year to cozy up with a steaming bowl of the most delicious soup you've ever had.  Yep, I totally went there.  This soup quickly became one of our favorites last year. I think I even got my sister-in-law hooked on it, too, when we stayed with them. It's all kinds of creamy, with zesty sausage, soft carrots, hearty spinach, and the most dreamy tortellini in each bite. This soup is one you'll make over and over again, and you'll probably kick yourself wondering why you never tried it in the first place! Let's dive right in! 

California Flatbread Pizza

Heeeey you guys!! It's FRIDAY!!!!  We are on our very last day of my Sheet Pan Meal week. I thought since we traditionally have pizza on Fridays, I needed to share a pizza recipe today.  And not just any pizza recipe.  A killer one. THIS one. Seriously. I may have eaten half of this by myself immediately after shooting it. Interested? Here we go: 

Sheet Pan Chicken Fajitas

Soft peppers, zesty lime, and chicken seasoned and roasted to perfection, all baked on the same sheet pan. Dinner is ready in minutes!  Here we are on day FOUR of my Sheet Pan Meal Week, and this one is probably the easiest.  Okay, it's totally the easiest. By far.  Other than chopping the peppers and chicken, even my 5-year old can make this by himself start to finish!

Sheet Pan Meal: Bruschetta Chicken

Hey there friends!!! Welcome to my day THREE of my official Sheet Pan Meal week. This one was definitely one of my favorites, so it was super hard to not share it with you on the very first day!  Mostly because bruschetta is one of my favorite things in the whole world.  Except for tacos. Tacos always win.  Tacos, then bruschetta.  Glad we got that covered.  This chicken is super juicy and cooked to absolute perfection. Top it with some soft mozzarella, and the most heavenly tomatoes stirred with basil, balsamic vinegar, and a little pinch of salt and pepper, and you are all set for dinnertime. Oh wait, I forgot to mention these KILLER potatoes! My goodness, they could be a dish on their own and have me sold.  Let's jump right into this goodness asap! 😁
