Tuna Stuffed Avocados

Savory tuna, soft avocado, juicy peppers, zesty lime, and lovely green onions & cilantro come together in this super healthy and easy lunch or snack!

These tuna-stuffed avocados were beyond tasty. I'm the first to admit that I'm not really a fish gal. Sure, I've had it a few times, and even liked it sometimes, but I've never actively gone out and said "hey, I need some fish in my life!" haha. So when I share a fish recipe on the blog, you know it's a good one to please just about anyone! Let's dive right in, shall we? 


The recipe is super simple. All wholesome ingredients: tuna, cilantro, lime, green onions, avocado, and red pepper. Stir in some spices to take it to the next level, and you have a very healthy and tasty snack or lunch on your hands! Plus, it's kind of fun to eat it right out of the avocado. 😏


I added a little salt, pepper, and red pepper flakes, but if you want to toss in some garlic powder, paprika, and cumin for a little something extra, I say go for it! 


The lime keeps the avocado nice and green, so if you pack this for lunch, I promise it won't look like a bowl full of greenish-tan mush (ew), when you get around to eating it.


What I loved most about these little guys was how fresh everything tasted together, and how versatile they could be. You could toss in jalapeno or green pepper, yellow or orange pepper, or just whatever you have lying around! The creamy avocado makes it taste just like a heavenly tuna sandwich, without all the mayo or miracle whip taking up most of the flavor (I love those, but just not for this particular dish). This recipe requires zero cooking, heating, or anything too time consuming. Just a quick chop, a little stir, and you're there. 

I hope you enjoy these little lovelies! They would be perfect as well for maybe a brunch with the ladies, or at a baby shower or bridal shower maybe? Tuna Stuffed Avocados
makes 1-2 servings


ingredients:
2 avocados, pits removed, and soft parts scooped out
1/2 red pepper, diced
2 green onions, chopped
1 can of tuna (dolphin safe, not in oil, etc, whatever floats your boat, haha)
handful of chopped cilantro
salt and pepper to taste
squeeze of fresh lime to taste 
optional: red pepper flakes, garlic powder, cumin, paprika 

method:
1. Mix all ingredients in a small bowl and scoop them into the shelled-out avocado bowls. Serve immediately!
