Pesto Chicken Alfredo French Bread Pizza


Well, folks, I'm 100% happy to report that thanks to my husband's government job, we have him home today! Yay Presidents Day!! (We love history and the presidents, which is why we intend on using another favorite president's name as our second son's middle name - just like our first!) 

President's Day also means our weekend fun has officially been extended. 

Who am I kidding? We don't have any plans! Ha ha. 

Whenever we have a long weekend, we go crazy with everything we have to do, and then use the extra Monday to just chill, relax, and slowly come back into reality. Instead of filling our extra day with all kinds of plans, we're probably going to just hang out. Sure, we'll hit a park later or something with the manchild, but mostly we just like to keep it simple. 

On days like this, I usually serve up something we'd have on the weekend - and that definitely includes our traditional french bread pizzas! Only this time, for the recipe you see below, I definitely switched up the flavors, ditched the pepperoni and red sauce, and took our favorite pesto alfredo sauce to one of our favorite ways to serve pizza - on the easiest crust known to man: french bread. 


I wanted to serve something fresh on top of all that gooey pesto alfredo sauce (make the sauce from scratch - it's SO easy and takes less than 5 minutes start to finish, I promise!), so I topped it off with some fresh tomato slices and a few green onions. I love the way it tastes on that bed of mozzarella bubbly goodness. And to keep it even easier - I just tossed on some chicken from a rotisserie chicken. It's one of my favorite hacks at dinnertime, and is just so simple. If you're wanting a quick dinner, and something that can be thrown together in under 30 minutes, THIS pizza, my friends, will do it. We served it next to a pretty gnarly salad, and some fresh slices of fruit. It was simple. The way Mondays should be!

Pesto Chicken Alfredo French Bread Pizza
makes 6-8 servings

ingredients:
2 T butter
2 T flour
1/2 t minced garlic
1 C chicken broth
1 C whole milk + more for thinning
2 T pesto
salt and pepper 
2 C shredded mozzarella cheese 
2 fresh plum tomatoes, chopped
2 green onions, chopped
2 C shredded rotisserie chicken
loaf of french bread, sliced longways

method:
1. Preheat the oven to 350 degrees, and make the sauce. Melt butter in a saucepan over medium heat and whisk in flour and garlic, let simmer for 30 seconds, then whisk in chicken broth and milk slowly. Stir in pesto sauce Season with salt and pepper. Set aside. 
2. Place french bread slices on an aluminum-lined cookie sheet. Slather with the pesto alfredo sauce, then top with cheese, chicken , tomatoes, and green onions. Bake for 15 minutes, or until the cheese is toasted and bubbly. Slice into serving slices, and serve with a green salad and fresh fruit.
