Lemon Mousse Frosting

makes enough for barely 2 dozen cupcakes

ingredients:

2 C heavy whipping cream, cold

1 small package Jello Lemon Pudding (powder)

1 t vanilla

1/4 C powdered sugar

method:

1. In a stand mixer fitted with a whisk attachment, whisk together all the ingredients until thick and frothy.
