Slow Cooker Chicken Philly Sandwiches


So we have the WORST luck with cars. WORST EVER, people.

We get in a lot of accidents - the real kicker is maybe 10% of those accidents are our fault. The rest are from other people backing into us without leaving notes, construction barriers flying into our front and side windows from the crazy West Jordan wind, teenagers slamming into our bumper and totaling our vehicle, and college students slamming into the side rear of our car from ice (Utah in the winter is a suck fest driving-wise). These all actually happened - and our poor car has taken a serious beating.

Unfortunately for us, a few of these accidents are cases where we're having to pursue the companies and people who are responsible because they won't pay-out. It's super-frustrating, but they should realize that when you hit the car of an attorney, and leave tracks and serious damage, you're going to get pasted to the wall with some serious evidence against you.

Why? Well, the first thing I do when an accident happens is take as many pictures as I can. Pictures are worth a thousand words - and sometimes a thousand dollars. For the meantime, we're driving a car right now with a bashed in door (it doesn't close all the way and the window is stuck - so a cold draft blows in through the cracks whenever we drive the car.). It's some serious high-class rolling. So if you see us - please soak in our awesomeness. If you'd like to pay our $1,000 deductible, please find our little car, and finish it off. Just make sure none of us are in the car, mmkay? Oh, and leave a note with your insurance info, please.

This sandwich is a perfect Sunday no-stress-no-work-but-big-taste kind of meal. It's fantastic. It melts all over the place when that mozzarella gets freaky with the meat and veggies. And how hard was it to make? With the exception of the knife stuff, my 2 year old could make this. Just chop it up, toss it in, leave it alone for 5 hours, and BAM - dinner is easily served. If you have a crazy day next week, put this on the menu. You'll be grateful to come home to something amazing to fill your lovely little bellies with without any effort at all.

Slow Cooker Chicken Philly Sandwiches
makes 4-5 sandwiches

ingredients:
2 T unsalted butter
1 large yellow onion, sliced
2 green bell peppers, stemmed, seeded, and sliced
2-3 raw boneless, skinless, chicken breasts, sliced
2 T McCormick Montreal Steak Seasoning
kosher salt & freshly ground pepper
8-10 slices mozzarella cheese
hoagie rolls

method:
1. Turn slow cooker to low heat with butter in the bottom. When butter melts, add in sliced veggies.
2. Toss chicken with steak seasonings, salt & pepper, then add to slow cooker on top of veggies.
3. Cover with a tight-fitting lid and cook on low for 5 hours.
4. Add a couple slices of cheese to each hoagie, and top with chicken, then veggies. The chicken should fall apart by now - and the flavors should melt right together on that blessed sandwich. oh man.

  1. Last Christmas, I was pulling out of a spot at the mall and a giant suv was waiting for my spot three car lengths or so down. After passing me and thinking he was not able to maneuver around the suv lady (false), this 17 year old kid starts backing up at literally a snails pace towards me. I'm already 1/4 out with my wheel turned so I'm afraid to make any sudden movements so I honk. Nothing. I LAY ON THE HORN. Nothing until the bumper ever so gently taps my car. I get out screaming at him because if he couldn't hear me honking or at least figure out why the damn suv was barely in his way by taking a look behind him before, oh I don't know, backing up? I have momma lawyer in the car with me, she takes care of all the information including pictures and getting the number of the suv lady witness. When the first phone call does not pan out and the mother of the idiot kid decides she won't be cooperating, (scarier) daddy lawyer gets on the phone and reminds her that our lawyer fees are free on top of all of the ridiculous circumstances. Check came within the week.

    On a lighter note, this recipe is making me miss my college days! Late night at the "diner" meant only the flat top and fryers were working, I had a lot of chicken cheesesteaks (thank goodness it was right next to the gym!) Yours looks amazing!

  2. My buick has been hit twice by a hit and run. First time my whole door totaled. I paid deductable of 500.00. Second time, just recent. I refuse to pay deductable. Now i got a misaligned door and dent and wont shut properly. I hear ya. I think honesty is missing in our society. You are not alone. Frustrating. Delicious sandwich.
