Roasted Peach Lemonade


AMAZING stuff. Ryan's parents have a giant peach tree in their backyard and we have greatly benefited from it this summer! We've already made several batches of this just in the past few weeks, and seriously can't get enough.

Roasted Peach Lemonade

4medium peaches, pitted and sliced in half
1tablespoon granulated sugar
4   cups fresh lemonade

1. Preheat the oven to 400F.
2. Place the peaches skin side down in a baking dish and sprinkle the tops with the sugar. Roasted the peaches for about 10 minutes or until the tops of the peaches are juicy at the skins able to be easily pinched off. (I do entire 9x13 pans full of peaches at a time, and keep them in there for about 25 minutes)
3. Remove the outside of the peach skins and drop the roasted peaches into a blender. Pour in enough lemonade to cover the peaches in the blender. Puree the peaches completely, until the liquid is a little foamy and frothy.
4. Pour the mixture into a pitcher and stir in the rest of the lemonade. Chill. Be sure to stir up the lemonade with a wooden spoon again before serving!

  2. I love this! Any chance we can make it alcholic? What would you suggest to mix in? Champagne?

    1. I honestly have no idea. I've never had a drink in my life, so I can't help you there :) But the lemonade is pretty wonderful as-is. Good luck! And thanks for visiting!
