Fresh Tomato and Basil Pasta

In a large bowl mix together:
  • 6 large tomatoes
  • diced 10 sprigs of fresh basil
  • fresh mozzarella cheese cubed
  • 1/2 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 tsp. minced garlic
  • salt and pepper to taste
Let this mixture marinade in the fridge for at least 3 hours then serve cold over your favorite hot pasta.
