Steak Fajita Bowls

Alrighty, friends! Another crazy healthy recipe you can either use for dinner or even as meal prep for your delicious lunches for the week is coming right at'cha! These steak fajita bowls are quick to assemble, are bursting with all the fajita flavors you love, and can be customized to whatever you'd like to have inside each bowl. For us? We went big and topped ours with all the works! 

Turkey Meatballs and Zucchini Noodles

Happy Pi/Pie Day!!!  I have been dying to share this recipe with you since the moment we first tasted it in my kitchen. It was a WINNER by all means, and fulfilled all my pie dreams and then some.  Without delay, let's jump right in: 

Mexican Beef and Rice Casserole

Sooooo I teased this crazy delicious one-pot meal a while back on my insta stories, and it got pushed back by my granola week - sorry for those who have been asking!  It's worth the wait, though. I'm just telling ya.  I can't say enough about this Mexican rice and beef casserole! Soft rice, rich beef, southwestern flair from the corn and beans, melty cheese, and topped off with all my favorite fixings. This dinner is sure to become something you'll want to make again and again, that's for sure! 

Almond Joy Granola

FRIDAY IS HERE!  Thank heavens. Friday is such a busy day around here, but definitely one of our favorites.  It's also the last and final day of my granola week here on Baking with Blondie.  Before I dive into this final recipe, lets do a quick recap of our favorite granola recipes that I've shared this week with you:  Monday: Dark Chocolate Strawberry Granola  Tuesday: Peanut Butter Chia Seed Granola  Wednesday: Banana Bread Granola  Thursday: Orange Cinnamon Granola  aaaaand today: Almond Joy Granola!  Coconut, chocolate, all wrapped up into a delicious bowl of granola - sure to become a regular in your breakfast granola rotation! Plus, it's chocolate granola. I mean, come on.

Hey you guys! Happy Thursday!! Tomorrow is Friday, and man, I can't wait for the weekend to be here. It's been a crazy week so far, and with a wedding cake in the works for Saturday, THREE family birthday's today, and a bunch of balls I need to keep in the air, I can't wait for a little break. Hopefully there's one on the horizon soon.  Yeah right. haha Anyway, we're are officially on day 4 of my Granola Week. Have you found a favorite, yet? I hope so! I tried to narrow it down to granola recipes with different flavors, genres, etc.  Today is this amazing Orange Cinnamon Granola! 

Banana Bread Granola

Happy Wednesday, everyone! We're halfway through the week, and already halfway through my Granola Week here on the blog. Heyyyyyy you guys! It's Tuesday, and Day 2 of my "Granola Week" here on Baking with Blondie. Yesterday, I shared an amazing Strawberry Dark Chocolate Granola that would seriously blow your mind.  Today, oh man, I had to resist to not share this one weeks ago when we tried it in my kitchen.  Let me start off by saying that this granola is BY FAR my favorite one we've ever tried. It's hearty, it's healthy, it's the granola I couldn't stop thinking about, and it's the one I seriously made up reasons to eat some more.  Intrigued? You should be! This one's freaking dynamite!!! 

Strawberry Dark Chocolate Granola

Hello dear friends!!! I have something super special to share with you this week that I've been working on for a while. As you know, at the beginning of every month, I take the time to dedicate and entire week to a different kind of food, and try my best to share 5 incredibly mouthwatering recipes to go along with that theme. In January, I shared some crazy delicious breakfast toasts, and in Feburary I went a little sheet pan dinner crazy  This month, I thought it would be fun to share my breakfast love: homemade granola.  My kids eat it up like crazy, so batch after batch is made in my kitchen. We've tried dozens of recipes, and the 5 I'm sharing with you this week are our absolute favorites!  Homemade granola is SO easy to make. You can make it into whatever flavor you'd like, and transform the flavors from perfectly healthy way to start the day, to even a more delicious sweet treat to have while you're binge-watching Grey's Anatomy on Netflix...

Chili Verde Chicken Chili

As a family favorite, this healthy light Mexican soup is finished in under 15 minutes, and has under a handful of easy ingredients. Win-win, right? I thought spring was right around the corner, but Utah had other plans today! We woke up to a fresh blanket of snow, after hitting almost 60 degrees yesterday. Weird. Oh well, we're firing up another pot of soup and will cozy up with yet another run of Moana and all the warm fuzzy blankets we can find. Another few weeks of winter seems much better that way! Soups like this tie everything together, that's for sure, and this one is definitely a winner.
