Here we are with Cupcake #2 of my mini series here on Baking with Blondie about Valentines Day Cupcakes! Customize your cupcake with a simple love note in the shape of a heart. It's super easy to make, and will have your lover's heart a fluttering over the sentiment.
I love notes. I love love notes. There's always a special song or saying between lovers that reminds them of their love and relationship. When Ryan and I were engaged, he went away for the summer to sell security systems (yep, one of those guys, but only for 1 summer, and it really helped us build up savings as newlyweds in college!). Quite often, he read me love poems he wrote over the phone. Sounds cheesy, but I missed him so much, and the love notes really gave me something to look forward to each night when we talked. He's still quite romantic, and will write me love notes here and there (and especially on anniversaries, birthdays, and Valentines Day).
I knew I wanted to create a cupcake that could be personalized for any relationship (even for a friends Valentines party!). These cupcakes were made with my vanilla cake recipe, with a Nutella buttercream, and then the heart notes were made from rolled out fondant. I used an edible pen for the writing, and the rest is history.
The process is pretty simple, but the trick is to make sure your fondant has completely dried before writing on them, or else the pen will make an indent wherever it writes. Sounds obvious, but I ended up trying it anyway and it totally made things more tricky than they needed to be, haha.
So think of something you love about your partner, or friend, and write it on your little heart for your cupcake! How fun a personalized cupcake would be for Valentines Day, eh? Here's all the directions below:
Love Note Heart Cupcakes
INGREDIENTS:
frosted cupcakes
white fondant
MATERIALS:
heart cookie cutter
rolling pin
parchment paper
Edible Pens (Wilton has some great ones in several colors)
DIRECTIONS:
1. Roll out your fondant on parchment paper until it's almost a thin as cardboard. Use your heart cookie cutter to cut out hearts. Remove excess trimmings. Let fondant dry at room temperature for up to a day.
2. Using your edible pens, draw out love notes, or heart designs. Let the hearts dry for 10 minutes, then place them on your freshly frosted cupcakes. That's it!
*If you're going to store these in the fridge after, I would wait to top the cupcakes with the hearts. They tend to get soft again after being refrigerated.
