Breakfast Toast Week: Almond Butter Banana Toast with Dark Chocolate Chips


Hey friends! Today's toast (#4 - see previous three posts, and tune in the rest of the week for some other yummy ideas!) in my official toast week is SUPER simple. 

Like stupid simple. 

But it's one of my favorite go-to's in the morning, so I couldn't do a toast week without sharing one of my favorite easy go-to toasts. If you think it's lame, then you can make yourself some of this toast and chill out, man. Just kidding. Not kidding about the "eating some of this toast" part, though.



Almond butter is something I couldn't live without. I put it in smoothies, I spread it on bananas, I eat it plain on a spoon (sometimes with dark chocolate chips stuck to it), and my favorite way to eat it is what you're looking a right now: on toast! 


Today was a little rough - I took my youngest in for his immunizations yesterday afternoon. I've gone through every shot with my oldest and he is all caught up until his mission someday, so I feel like I've been around the block when it comes to immunizations. My youngest had his shots, I gave him some Tylenol beforehand as usual, we came home, his fever kept spiking when the medicine wore off. I figured, "Hey, fevers are normal. We're all good." Then the shakes happened. 

He began to shake all over. At first I thought he just had the chills, but they were nonstop, and he began to be inconsolable. He is usually a VERY mellow kid, so I was really freaking out as what I should do to help him. I drove to Instacare, but by the time we arrived, the shakes stopped, and he was fast asleep. I decided to drive home and set an alarm on my phone to stay on top of the Tylenol through the night. 

We wake up, he's still freaking out, still spiking a high fever, and the chills/shakes were still there. It didn't seem right, and I was pretty scared. I called his pediatrician and they said bring him in first thing. I dropped off my oldest and drove straight over. 

The doctor watched the video I took of the shakes, and my child was sobbing the entire appointment. I teared up as he told me everything was going to be fine, and that my son was fine. Apparently kids react differently to shots, and my little guy just so happened to have an eventful aftermath to them. It sucks, but he's been much better this afternoon. He still is fussy as ever, but it's not at a constant. He's napping better after being on both Ibprofen and Tylenol, and hopefully will get back to himself by the weekend. We're keeping a close eye on him, and hope this is the only time his body reacts to the shots like this. I hate the feeling of being helpless, and not knowing what is happening, and not knowing whether or not I should take him in or not. My default is "take him in." Although it makes me feel stupid sometimes at the doctor's office, at least I'll be able to sleep at night. Also, if anything goes wrong, I won't blame myself for not taking him in. 

I'm not writing this to get all the anti-vaxers to find out where I live and burn down our house for "torturing" our child like this, but merely to say "hey, today kind of was messed up, mmkay?" We all have those days. Today was my turn, I guess. 

Good thing for toast, eh? 


Almond Butter Banana Toast

ingredients:
honey whole wheat toast 
almond butter
banana slices
dark chocolate chips

method:
Toast the toast. Spread with almond butter, top with bananas and dark chocolate chips. 
Enjoy!

  1. I made your almond butter banana toast but I used brown bread instead. Pakistani Cooking Recipes are the best. I love all Pakistani Recipes and indian recipes and mostly the appetizers by zarnak sidhwa recipes
