Candy Cookie Pie


Halloween is in ONE WEEK!!! Can you believe it?! I swear we just barely jumped into October and here we are in the final week. Our home is supposed to be finishing up it's building process next month, so flying through October is not a problem for this gal. 

However, my husband and I are yet to find a Halloween costume. Eek! 

I realized last week that I shared this recipe on Studio 5, but I never shared the recipe on my blog. Shame, shame on me! It's a great one, and perfect for Halloween leftover candy. 


I'm a huge believer in using up leftovers. Usually our leftovers include just things from dinner the night before - we have them for lunch every day until they're completely gone. I hate having to waste food, and we're not perfect, but we do what we can to use up what we have before it goes bad. 

Now these kind of leftovers, as in leftover candy from Halloween, I'm all for making them into all kinds of baked treats! I know it's kind of overkill to put a treat in a treat, but when you've committed to eating a bit of Halloween candy, might as well make it into a freaking cookie pie and call it good, am I right? 

This recipe is just my cookie dough base with a handful of candy, piped with some of my favorite cocoa buttercream for good measure. ;) Make sure to slice it into little pie slices when serving, and don't forget a scoop of ice cream and drizzle of hot fudge on top! Overkill? Never. haha. 


Candy Bar Cookie Pie
makes one "pie"

Ingredients:
1/2 cup (or 1 stick) unsalted butter, cubed
1/2 cup brown sugar, packed
1/3 cup granulated sugar
1 egg
1 teaspoon vanilla 
1 2/3 C all-purpose flour
1 teaspoons cornstarch
1 teaspoon baking soda
heavy pinch of salt
1-2 cup chopped up candy bars, leave some out for placing on top

Method: 
1. Prep a glass pie dish with cooking spray and set aside. Preheat oven to 350 degrees. 
2. In the bowl of a stand mixer fitted with a paddle attachment, cream butter and sugars together until smooth and fluffy, about 3-5 minutes. 
3. Scrape down the sides of the bowl and mix in egg and vanilla. 
4. In a separate small bowl, whisk together flour, cornstarch, baking soda, and salt. Add into the mixer slowly, about 1/2 cup at a time until just combined. Toss in candy pieces, leaving some out to press on top. 
5. Press entire batter into the prepared pie dish, making it as flat as possible (using a sheet of parchment paper would be helpful here for pushing everything down flat). Press a handful of candy pieces on top of the cookie pie. Bake for 15-17 minutes, until center is mostly done and edges are slightly crispy golden brown. Let cool to room temperature. 
6. When the cookie pie is baking, prepare my buttercream frosting and pipe (using a 1M star tip) on the outside edges of the cookie pie. Place either M&Ms or any other circle candy on the top of each piped star. Slice like a pie, and serve!
