I am deathly afraid of thunderstorms.
Ryan has tried countless times to convince me how ridiculous it is. But how on earth am I not supposed to fear giant bolts of electricity randomly raining down from the sky? How is this not frightening??
I remain unconvinced.
It's a good thing my son thinks the lightning is merely a firework display, or else I'd have a hard time being the fearless parent who comes to the rescue at night when he's afraid.

Oh yes, the limeade. Each week I'm challenging myself to come up with one recipe by myself. No sources/recipes to look from or use. It's been an adventure - at first I thought Ryan would hate the dishes and drinks I've made so far, but he's loved them. When he's asked me where the recipe came from, I like the way "the recipe is mine" tastes. This recipe was no exception. We received some fresh mint from a friend's garden this weekend, and I immediately knew we'd be using it for mint limeade. However, the mint we used was a little less minty than expected - less like toothpaste, and more like a mellow mint hue in the background. It worked perfectly with this recipe that way.

Simple Mint Limeade
makes about 4 medium servings
ingredients:
3 C + 1 C water
1 C sugar
5-10 medium sized mint leaves (depending on how strong you want the flavor)
1/2 C fresh lemon juice
3/4 C lime juice
method:
1. Prepare simple syrup. In a small saucepan, combine sugar and 1 C water. Stir until uniform throughout. Add about 4 mint leaves to seep into mixture. Bring to a boil, turn down to a simmer for about a minute, then remove from heat. Let cool to room temperature (to speed things up, throw into the fridge). Remove mint leaves.
2. In a small pitcher, combine 3 C water, simple syrup mixture, lemon and lime juices. Refrigerate for about an hour. *taste to make sure the flavors are to your liking, make adjustments if necessary.
3. Place a 2-3 mint leaves in a few glasses. Pour limeade into the glasses. Enjoy!

You are not alone about the thunder and lightning. I am very nervous when it happens. After all, it is DANGEROUS!!!!

I'm so glad - I seriously thought I was the only adult on earth who was still afraid of thunder and lightning! It scares me to death when I see people outside on the trampoline or even outside walking when there's a thunderstorm rolling in. Hiding in the house and maybe peeking through the window seems to be my go-to option.
DeleteIt is thundering and pouring down here. We live in North GA. Has been some lightning too. YIKES!!! I don't even like to be close to a window. I thought about you when a loud crack of thunder startled me.

OH man, you East-coasters have some pretty incredible thunderstorms! I can't even imagine! When we stayed over in DC for an entire summer, the thunderstorms were HUGE. But even though I was scared to death, I still got a kick out of how the thunder over there doesn't have mountains to bounce off of - so it feels like it don't last as long.
DeleteI LOVE limeade! I've never had it with mint before, but it sounds yummy. And it's so neat that you're coming up with original recipes on your own. That's an awesome talent to have. I always wonder how contestants on those Food Network competition shows can just whip a delicious recipe together from something like tuna in a can, spam, beets, rice noodles and ketchup. Hmmm...maybe you should try that combo next. :P
ReplyDeleteAnother reason I think you are seriously like my twin!!! I'm deathly afraid of thunderstorms too! My hubby thinks i'm such a wimp!! I did have an experience at girls camp when there was storm and killed one of the girls in our camp maybe thats why!! BTW I LOVE LIMEADE!!! i'm totally trying your recipe!! You're amazing!!!
